However, we are not as tight with our budget now that I have a job. I still love a good deal, and I still like to use coupons when it works out, but I have gotten to a place where a coupon is a thing I “use” and not a thing I “do”. Because they were deals that were too good to pass up, of course! I would spend an hour planning for a trip to the pharmacy, lining up all my coupons so I could do the perfect transaction that would total less than $5 and then if the sweet high school girl working the register told me my total was $7 I would look at her like, “Oh no, that can’t be right. If I bought something it was because it was a “deal”. (This was before “ Extreme Couponing” was a thing, and I never got to that point.) One day when my oldest child was two years old I came home with some bags from the store and he said, “Mommy, Did you get your deals?” and it occurred to me that I even had a language for what I was doing. Like, how other people like fishing, hiking, sewing, and scrap-booking, I liked “couponing”. There was a time after quitting my job and having kids that I learned how to be a “coupon lady”. Thank you Crystal! My “coupon lady” days. About nine years ago I decided to take my frugality to a whole new level when I learned the trick to using coupons. I am sure that this frugal mindset was passed down to me by my mother, who I talked a little about in a previous post. I love a good deal! Initially you will think this is a long recipe, however if you have the Jerk Spice Rub already made ahead, you can use store bought if you like, (no judging here), it’s actually quite quick to prepare. Unless Instant Pot comes out with something similar of course and then it will be interesting to see which is the best product. I’d like to be able to cook multiple recipes at a time making Meal Prep even easier and getting dinner on the table even faster. I currently have the official Instant Pot Duo, 6qt which is plenty large for everything I’ve wanted to cook for my family of six however I do think I need a second one. ![]() Speaking of Slow Cookers, it has that function as well, but I prefer to use the Pressure Cooker even for things like a Roast, it is just so much faster. Third, (I told you I liked my Instant Pot), is that the flavours come out really deep, it doesn’t wash out the taste like I find the Slow Cooker does. For one thing, I like the set it and forget it aspect, and second having the ability to Saute first and then Pressure Cook in one dish is awesome. Honestly, I am so surprised at how much I use the Instant Pot, it’s not always faster, but it is easier. Truly, full of flavour and only 2 WW Smart Points without feeling like you are eating diet food. Instant Pot Jerk Chicken it’s the latest delicious and healthy dish to come out of my Instant Pot.
